Plate rib question

I wan to grab some plate ribs from Wild Fork, they have 2 options choice and prime. Prime is less than a buck more a pound so seems like a no brainer.....unless choice would be better for low and slow? Any other suggestions on what else to order? I do know I want veal osso buco as well.

Thanks, Don't see beef cheeks. I can get TT and Picanha locally. Going to get a mix of various chop meat to create my own burgers as well.

Their plate ribs are about 6 lbs each how many good sized adults can that feed?

I'd plan for one rib per person. Maybe factor in 2 extra bones depending on how many men are eating
 
I miss a good flank steak. Everything around here is pre- marinated.

Prime, coarse salt and cracked pepper, 275° till probe tender at 195°-205°+/-
If they're full sized plate ribs one is all you need, more than one is delicious gluttony... I've been guilty.
