Took the big ol elephant garlic head outa the fridge,cut off the root and the top.

Wrapped in foil with about a TBS of olive oil slathered over the top.

400 for about an hour ... til soft..

Pulled out the meat and smushed it with a fork.

Served on a cracker.

She sez...mmmmm awesome..






Mmmmmmmmmmmmmmmmmmmmmm garlic....
 
Looking good Craig - I love roasted garlic and yours looks great. 

We like to bake a french baguette then slice and slather with some dijon, then top with the roasted garlic a good slice of brie and a slice of country pate.

Craig, morning....  Looks like a great way to eat garlic to me...... The folks that haven't tried garlic like that are really missing something delicious....   Beautiful women (or men depending on your gender) will live up for miles to get a smooch or two...   HAHAHAHA

We get peeled Garlic, 5LB containers every 4-6 weeks. More than half goes into becoming Roasted Garlic. My favorite way to eat it is a dozen or so cloves mashed with 2T Parm Reggiano Cheese, 1T EVOO, 1/2tsp of Red Pepper Flakes and S & P to taste. I then spread some of the Garlic mix on a Crostini, add a slice of Sopresatta and a strip of Roasted Red Pepper. Add a glass of Sangiovese/Cabernet blend like Col di Sasso, some Taleggio and assorted Olives and you got one fabulous Supper...JJ
 
Looks great Craig!!! I thinks one of the best ways I have had it was just how you did it, wrapped with heavy duty foil and put it in a fire… to let it roast….If it gets a little toasty around the edges, it’s even better !!!! OMGoodness it is sooo good!!!! Oh! And another good way to eat it……. is boiled in crab boil!! Fantastic!!!

Yup!! We always took some with on scouting campouts...laid in the coals under the DO.

Crispy was best and the boys did not have the taste for garlic so it kept them outa our food..

I used to go every year to a cigar crawl in NO that ended with a boil...lots of heads boiled with the bugs...I can prolly scare up a pic from the last one I went to..

Craig, you can post pictures like that!!! You know that the crawfish are not running and that’s just teasing some of us!!!!  Great looking picture, I feel like I could work that pile pretty good right about now!!!!!
