I have been trying to build a collection of Classic German-made butcher knives, and ran across this carbon steel blade on eBay. It is heavy at nearly 2 lbs, but very sharp and holds its blade well.

And has cool badging in my opinion.

I like it. Looks like a keeper to me. I have a F. Herder and Sons (black spade insignia) 14” slicer with rosewood handle. Solingen steel.

Nice!
I read that all Herder knives are pre WWII because the plant was completely destroyed in the bombing campaigns and never rebuilt. Not 100% on that though.

A little sheep skinner also.

Very Cool! I periodically check goodwill auction site and eBay for unique vintage German cutlery. I actually got the Wusthoff cleaver from goodwillauctions.com.

I have also been looking for information on that Otto Dick as well as the history of Herder knives... I have been unable to locate resources. If you know of any resources please let me know.
