new knife sharpener for touch ups

Last week the recurring knife sharpener discussion came up. Since I am easily enabled, I usually have to get out a sheet of notebook paper and go check my knives. My cutlery array ranges from Budget (Chicago cutlery)to medium: Misen (late night drunk food channel buy) Brewin and my Wusthofs.
I already own a Worksharp Ken onion electric sharpener, but it scares the S$%T out of me to run my good steel through it sometimes.
Anyways, I gave Mr. google a visit and ran across this dude (among others) that seem to have his fecal matter in place.

I got the one he recommended in the best budget range. Just a pull through but it did have manual angle settings.

Anyway, $50 and it was on the truck. When it got here I gave it a test drive on my old Chicago cutlery butcher. knife.
A few swipes and I was cutting paper like Fieri Ninja wanna be.
I know its not fancy, but came with a bag and is easy to pack in my traveling kitchen kit.
FWIW I steel my knives almost every time before I use them.

I like the angle adjustability of this tool. I have some of the Lansky "Sharp" tools that are similar, but have a different slot for different angles.

I have a Ken Onion Workshop and my best advice after you establish the angle, only use the fine belts, and save your old belts to use for polishing. I strop only certain knives, by hand on a block.

I would recommend looking over the Wedgek ® brand honing guides. Simple and a great product. Amazon has them for $10 or so.

Do you still love this sharpener? Amazon has it on Cyber Monday deal for $39.99. Thinking about buying it.

I have a work sharp as well and run budget to high-end iron through it, it does an amazing job. I use a steel to keep them clean in between sharpening, I have a similar handheld that I use when I need a quick touch up.

I have a work sharp and a hoard of bench stones. I have and exclusively now use the diamond and ceramic v rod sharpeners from AG Russell. I discovered that for the most part I was way more concerned about sharpness of knives than anyone else I associate with. I use a steel and then a leather strop and if they cleanly slice printer paper they’re good enough.
