Hey all from captgreg as bout far south as you can go I’m in the Keys and I think I must be the only one down here that makes sausage and grind my own meat I am and old school butcher and a super market mgr And boat captain retired because of injury.
Anyone need help feel free to ask I’m 67 and know just a little but try.

Thanks guys wish we had some of your cool weather and Deer the size you have, we have some of the baddest Swamps there is to hunt.
 
Oak for the sausage and buttonwood for the fish because of the oil that’s in it. I have found out any wood the bugs will eat you can cook with.
