Wanted something different than typical BBQ chicken and we really like Asian flavors, so I went searching. Came up with this marinade from the interweb...
The next day I drained the chicken reserving the marinade which was put in a pot on the stove to simmer...
Cooked over oak and basted with the reserved marinade...
While that was going, I cut some gold potatoes into wedges for crispy Greek potatoes. These were coated in Greek marinade I've used before...
I cut up some fresh carrots and partially cooked them in a little water and then added in a stick of butter and a 2 lb. bag of frozen sweet peas. Cooked until peas were just hot and the carrots were done. Seasoned with a little salt.
Meanwhile, the chicken is getting close...
Finally all is done...
Served with some toasted bread my wife fixed. Give thanks...

- 4 Tbsp olive oil
- 2 Tbsp sesame oil
- 8 Tbsp low sodium soy sauce
- 2 Tbsp Worcestershire sauce
- 4 Tbsp lemon juice
- 10 Tbsp maple syrup
- 10 cloves garlic minced
- 1 tsp cracked black pepper
- 4 tsp kosher salt

- 3 garlic cloves
- 3/4 of a cup olive oil
- equal amount of water (if not parboiled)
- 1 tsp dried oregano
- the juice from 2 lemons
- 1 or 2 tsps of AP flour
