Oh Boy!!! Oyster Mushrooms!!!!

awesome find!!! there are lots around here but like said way too cold up north yet.

my favorite way to cook them is tossing them in the skillet sliced up. med/low heat to render the water out. lots of water in these things! when the water is almost gone add a couple pats of butter and seasonings you like in the skillet and very lightly brown. then add a splash of chicken stock to the pan and get the skillet bits up. reduce that down to almost gone and its done. that process brings out that mushroom flavor more than any other way ive tried them.

Awesome gift and find! When we moved to our woods here 23 years ago, I was amazed at all the beautiful shrooms fruiting all over. Had never really paid attention to mushrooms till then.

I went into a bender, delving into mycology, got the Audubon Society mushroom book and joined a web site called "The Shroomery". I dont think its the same site as back then because there were far more topics than psilocybin. There was a member called "Toxicman" who was a mushroom poisoning expert at the University of Phoenix. He volunteered his time on the site to help people not get sick or die!

Learned a lot and found a lot of edibles around the property. I was so into it, I would stop at neighbor's houses and ask if I could harvest that huge brain mushroom puffball in their front yard! After making sure they hadn't put down any chemicals in their yard I would bring them home and make mushroom Parmesan...those things will slice like a loaf of bread and hold up to breading and pan frying.

Did pickled honey mushrooms, sauteed and/or deep fried lapoita procera (parasol mushroom), even had a few morels fruit on a little sandy concrete block walk out back...one time and never again. I DID verify they were real and not the tricky false morel which has a lifedose of a substance similar to rocket fuel that can cause organ failure.

That obsession passed though. I haven't harvested shrooms in years now and dont even eat them a lot these days. I dont hate them, just not obsessed with them anymore.

I went back yesterday. Found a lot of huge flushes, but they were all old....

Supposed to be rain 3 days this week so maybe next weekend they will pop out again. Will be a little cooler too which should help. we've been breaking record highs lately....sure is hot!

I drove down to the Mississippi river today to walk inside the levee to look for more oyster mushrooms. It is a 5 minute drive from my house....Boy did I find them! Second flushes were popping out from the big first flush after the snow melted. Filled up 3 plastic grocery bags in about 30 minutes. Only walked a little over 100 yards...

Thanks Rafter! I love 'em! off the charts umamai inda pot when you cook with them. They have a very delicate, sweet almost floral earthy scent when fresh. These mushrooms grow on dead wood and harvest minerals from the wood. They are high in trace minerals and are very healthy to eat.

Wow what a haul and that dish looks great! I have tried several times to find morels but no luck! I do love mushrooms and going to make that soup. Most the crab that comes in the plastic container at the deli is to $$. Guess I will just get the canned stuff.

Yeah...a double batch of that soup cost me $80 bucks. Just the crab was $50....but oh so worth it after the first bite!

still too early but its warming up fast in forecast. i did go to the local farmers market and scored some blue oysters. he did me solid on the pound. i had 2 dishes and still have the biggest to go yet. they are much more solid than the wild ones i get here. taste was awesome too! just cut that morning. he had oak oysters(those look like wild ones i find) blue oysters and some bearshead 20$ a pound. i been reading up on growing them a bit. it seems my basement would be perfect all year. be fun to try it i think.

It was delicious! Front rolling through now with rain and cooler weather. Will go check again this weekend at the river for more shrooms...I expect to find some.
