Your use of your KitchenAid mixer was my inspiration to get a grinder for it, and now to mix stuffing with it.
I like seeing how I can work with what I have, and not necessarily have to build a stuffing section onto the house.

I do have a question though....
Do you add the Tang before, or during the mixing, or when sampling the final Summer Sausage...

Tsk. It has to be the grape tang!

The grinder on the KitchenAid does ok for grinding meat (it won't do large amounts without overheating) but it is a disaster as a stuffer. Don't do it unless you are good at putting the toothpaste back into the tube.

Stuffing, yes, I haven't done a single one yet. But already I can see great advantages to doing the stuffing by hand for ultimate control of the flow.
So I've been exploring the different stuffer options. Already I can see the advantages of Gear and Screw Stuffers over the cheaper ones. I was watching a video by one equipment supplier and it actually took two guys to get-r-done with their stuffer. I was glad to see that video, because it confirmed my suspicions about a Rack and Pinion, versus a Gear and Screw stuffer drive.

I do have a "Secret Weapon" in my shop I was pondering using. It is a momentary foot switch I could press with a foot to control the KA during stuffing. So I think I will see how that can work as my last ditch effort before ordering an expensive stuffer.
And already, Rick (nepas) has convinced me to get a smaller stuffer (5 pound size) if/when I go there. A smaller stuffer can work better for what my intended casing size would likely be, Snack Stick size.
Besides I know I would be more apt to use a smaller volume anyway. I buy my meat retail, so no volume here in my life anymore. Just small batches.

I did find my foot switch. Ticky, ticky, tappy....

It isn't the on off that is the problem with the KA. It just doesn't move the material well. Give it a try. It will work, sort of. Then you will buy a stuffer.

Then today Northern Tools sent me an ultimatum email about Last day for free shipping. So I took a look...
They sell the identical one that The Sausage Maker does, for $99. And free shipping ($19.95). And no sales Tax.
So BANG!
It's on back order though. So I have play time in between.

I bet Grandma grinds my butt and puts it in the stuffer. :emoji_poop:

I almost didn't get it. PayPal screwed it up.
But I tried there Chat and averted disaster.

When looking at TSM website, I did a double take on that particular stuffer.
Knowing my butt might be in it, I pulled the trigger on Northern Tool's offer.
A stuffer just makes sense to me to control the procedure, after watching a number of video's.

This is really cool. I, too, often make sausages at home, my husband is a great gourmet, and homemade food is more beneficial for children. And my indispensable assistant in cooking sausages is the best sausage stuffer. It’s good that we live in the 21st century and all the technologies are available to us :emoji_wink: I’m happy to try your recipe, you have a good texture. Have you tried it with a different kind of meat?

Maybe my collagen tubes will finally arrive today?
When UPS gets embarrassed because they took too long to deliver, they hand-off small packages to the post office to finish the delivery on.

I'll be ordering from a different vendor next time. 8 days is not good service. (8 and counting, that is) The corn isn't the only slow thing in Kansas.

Several times. I have used moose, deer and elk thanks to generous friends (I am too lazy to hunt). I always use 50% pork shoulder though as, with no binders, you really need the fat.

Don't your local outdoor stores carry collagen casings? I can even get them here in our small city in the Rockies.
