My proposed use of the 10mm stuffing tube

I've done way more researching than making in the new (to me) world of sausage, but I think I've made a good decision on that tiny tube that came with my Hakka stuffer set.

I've read stories of its use on a vertical stuffer going from very hard to destructive, including advice to make sausage meat finely ground and overly moist. That killer ratio of piston diameter to tube diameter is virtually insurmountable.

Therefore, I found my old caulk gun sausage/jerky maker bought and used once over a decade ago to stuff Italian sausage in hog casings. It worked but was ridiculously difficult to do with a normal size Italian sausage.

However, my brand new 10mm metal tube fits perfectly on it (pure luck!). I've learned that 16mm collagen casings (Walton sells them) will fit on this tube, and 1 lb of sausage meat will produce 7.4 ft of Slim Jim equivalent sticks. The piston to tube diameter ratios in a caulk gun stuffer are very workable, too.

I can see making a 2-3 lb batch of "slim jims", enough to last a long time! Or, three 1-lb batches of different flavors. Tons of fun, and a new life for that old caulk gun.

I currently have 19mm casings which will fit on my 16mm tube. A pound of sausage through that setup will yield 5.3 ft of sausage slightly smaller in diameter than a nickel. I'm thinking of a 3 lb batch of pepperoni sticks using the Hakka stuffer.

Last thought: Acquire 16mm collagen casings. Thaw out my first butt. grind it and mix with cure #1. Then, divide it into 3 portions of 1 lb each and 1 portion of the rest, then into the fridge. Mix up 4 spice flavor batches, different ones for the 3 slim jim portions and 1 for the larger pepperoni portion. Stuff them all up and process to final sausages.

The excitement mounts...

I have a Hakka stuffer and stuffer and I don't think you can break it. I make sticks a lot and don't fine ground or add extra water. People go to fast I think, need to have time to let the air out when cranking

I've not used the jerky cannon personally but have witnessed somebody else using it... We found the easiest/fastest way to reload the cannon is by using the stuffer... Slide the tube of the cannon right over the tube of the stuffer and start filling it up...

I usually just make small round balls and drop down the Canon tube. May try the stuffer technique 😉

There's posts of mine all over here recommending the jerky gun for sticks. Had no idea how much pressure it put on the stuffer! I use an ice cream scooper to load the gun. I am quite good at loading and using it now and use the gun for everything.

I have a LEM jerky cannon, and it works great, but I got tired of reloading so I got the 5 lb might bite.

Speaking of jerky, I came to the revelation that I don't need 16mm collagen casings at all!! I'm just going to extrude my sausage meat from my jerky gun through my 10mm tube directly onto a small mesh rack in lengths appropriate to the rack size.

Then, into the smoker for progressive temp drying/smoking using this schedule:

In your MES40, a typical schedule for 10mm sticks might be:
  • 120-130°F for 30-60 minutes to dry the surface.
  • 140-150°F with smoke for 1-2 hours.
  • 160-170°F until the sticks reach 152-155°F internal temperature.

Yeah you don't need casings. That's how I run kabanosy.

I made a thread about this a while back with a 30 lb motorized LEM …. My answer would be get a hydraulic stuffer ….. until then I’ve just been doing larger diameter sticks .. 30 mm cellulose the stick with shrunk up and you’ll peel the casing and get a good result just no slim Jim diameter…. What causes most of my issues was the hi temp cheese in the small diameter stuff

No electric or hydrophilic stuffer for me. Wildly beyond any cost justification for my low-level sausage making needs. I'll just do the best I can with my 5 lb vertical stuffer and meat gun. I will make 10mm caseless sticks with the gun and 19mm cased sticks with the stuffer. Quantities will never exceed 3 lbs, and only a couple times a year.

I'm more interested in 32mm collagen cased sausages of many types.

In the future, I'm going to use cheddar powder for some sausages. No high-temp little cheese cubes for me! A number of opinions say this will work.
