Beef and broccoli.

Made this last week.

Velveted 1 pound thin cut sirloin against the grain for 30 minutes with 1.5 tsp baking powder. Then drained and rinsed well. Then patted dry.
Then, in a bowl with meat. I put with 1 tsp corn starch, 2 tsp oil, and 1 tsp oyster sauce. Let at rest for 15-20 minutes.

In another bowl for the sauce. Mix together.
3/4 cup chicken stock
1 TBS oyster sauce
3 tsp soy sauce
2 tsp sugar
1/2 tsp sesame sauce. I used toasted.

The rest of the ingredients,
Two large bunches of broccolis. About 5 or so cups.
1 tsp minced garlic. I used the stuff from a jar.
1/2 tsp ginger. I used the paste in a tube.
1 tbs Chinese cooking wine
2 tbs corn starch
3 tbs oil

Sear the beef in a wok with the oil. Then remove.
Add another TBS of oil.
Add the ginger and garlic. And cook for a few seconds.
Add the Chinese wine. Stir for a few seconds.
Next add the sauce you made.
Stir well to incorporate the ginger and garlic.
Take the two TBS of corn starch. And mix with a few TBS of water. And add to the wok slowly.
Allow it to simmer and thicken. About 30 seconds.
Put the beef back in.
Add the cut up broccoli on top. Do not stir the broccoli into the mixture yet.
Put a cover on the wok.
And let the broccoli steam for a few minutes or so until broccoli changed color. But it still
crispy.
Plate over rice of your choosing. I like the rice in the steam able pouches.
Or real rice. Had neither. Only had instant rice.
Overall. Meal was darn fine. The only take away was the rice.

I tried velveting some flank steak for the first time last week for a beef & haricots stir fry. The recipe I looked up online made no mention of rinsing the meat afterward. Yeah, the taste was unusual, to say the least. Lesson learned.
 
That looks awesome Steve and those are flavors we really like around here. This will be happening soon for sure...

I tried velveting some flank steak for the first time last week for a beef & haricots stir fry. The recipe I looked up online made no mention of rinsing the meat afterward. Yeah, the taste was unusual, to say the least. Lesson learned.
For me it really depends on how much soda I use. Just a light sprinkle and let it marinate for a few hours - no need to rinse.

Heavier application of soda and less time to for it to work - rinse.

Looks absolutely righteous Steve, perfect. Love the stuff but hate to get it as take out. My BP stays at stroke levels for 3 days if I get it from City Wok.
 
Looks and sounds great Steve, love a good feed of Beef and Broccoli

Add a couple egg rolls and I will start ordering from you. I like a little snap to my broccoli.

You could open up your own Asin take out at the campground , gear up a wok in you new outside kitchen.

You would be busy ,lol
