Bought a Traeger Silverton at Costco. Coming off of propane Weber. Am experienced cook but a bit intimidated with pellet based smoking techniques.

Have done 3 meals so far. Smoked corn, veggies and hamburgers..

The Traeger had some temperature variance last night. Started in smoke mode for 10 minutes and turned up to 350.. It went up to 410. I opened lid, temp went down and then stabilized around the 350 range.

Ready to try out a brisket. I’m seeing 10-12 hour recipies in smoke mode/225. Want to make sure that the temp stays consistent if I’m not watching it.

Any suggestions for a newbie?
 
Welcome. I have an older Traeger, (USA made model), and the temps swing a lot due to the nature of the pellets dropping in the pot. pellets drop in and fire gets going to temp and auger shuts off. temps still rise until the full burns down then dips below your target temp and repeats. Traeger are really easy to use and provided you keep the hopper full you will have zero issues doing the 12 hour cook. Pretty easy to operate and really hard to mess up a cook on them.
I wouldn't worry too much about the temps rising above 225 one bit.
