I have 3 racks of ribs, spare ribs.  I normally do a 3-2-1 method......  Well I got out of work late and family is coming by around 6ish. I got them on the smoker about 2:00 & I'm running about 255.  Will a -2-2-1 work go with spare?   Guess I'm just nervous  cuz my sis is home for  a few days.  I wanna make this right. She lives in the south and I'm from PA so I have to get it right.

Thanks for any advice...
 
Foil with some Apple juice and go in a 325*F oven for 1 hour and test them for tenderness if not ready go another 30 mins and test again and so on. It should trim the Hour you need...JJ
