Put in as much as you like, we love garlic & would load it up. I use fresh garlic & coarsely chop it so you get chunks of garlic in the potatoes. For 4 or 5 potato's I would use 16-20 cloves of garlic. But as I said we love garlic!

I use a whole head of smoked garlic for every 4 potatoes. It is carmelized goodness for sure. Also I almost always use Borsin Cheese or Creme Fresh in my mashed taters
