The other day I had mentioned in a post that I had made smoked garlic butter for melting on steaks.
This was my method
Melt a small amount of butter in a cast iron pan.
Add some minced garlic. How much you use depends on how strong you like the garlic flavor, I used about 1 teaspoon.
Fry this until the garlic just starts turning brown.
I then took a stick of refrigerated butter and placed it on a bread cooling rack on the smoker. Since it was a hot day, I placed the pan of fried garlic under the butter to catch any drips if it started to melt.
I filled my smoke tube with Pit Boss competition blend pellets and cherry wood chips, and one hour later removed it from the smoker.
I then put the stick of now very soft butter in a bowl and mixed in the fried garlic.
It went very well with the steaks!
