I had some kabonsy a fellow made a few months ago..

Then Shannon and Nepas made some..

Sooo ... I had to get my sausage on today!!

Ground up 2 big butts and pulled out 11 pounds of it (the rest gets used tomorrow for breakfast sausage..Pops recipe..patties..) and used this recipe..used dextrose not sugar...

Sheep casings on the motored stuffer ..done in no time at all...

It is now resting in the fridge waiting for the smoker tomorrow.

I made a 9.2lb  batch on Saturday, and less than 4lbs are left.  I have to start making larger batches.

22-24 sheeps!!

They  didnt come out as dark and wrinkly as I expected.

Used pecan in the amazen and the mes started at 100 for a few hours.

Then to 135..then into the poach....

Very tasty...they are now in the paper bag in the fridge...

Next time I will make links instead of a rope...

Them look good.

Hang them up somewhere for a couple days, they will darken, dry some and get a more intense flavor.
