Step #1
Buy the meatiest pork belly you can find.

Step #2
Make several cups worth of homemade Red Fajita rub, and then rub with lots of love.
Wrap and let brine overnight.

Step #3
Mix Mesquite and Ultimate Blend pellets 2:1 ratio.
Fire up the RecTeq to 350°.
Cook the belly for approx 3 hours and then braise for two more.

Slice and make tacos!

Thanks, they were and will be... Lots of leftovers.

It's just a seasoning mix based off what I used to buy made by Lawry's and Badia.
I start with ground chile powders, usually Ancho and Guajillo, maybe some Arbol or Cayenne if I want more heat.
Fine ground sea salt, hot paprika, granulated garlic and onion and cumin.
Sometimes I'll add some ground Mexican oregano.

Lordy lordy John, that all looks amazing my friend!! That final plated shot is 5-star restaurant quality. Simply stunning and I can only imagine how amazing the flavors were.
