Looking for the best rabbit recipe.

So My lady and I are thinking about maintaining a rabbit hutch. I hunted rabbit as a kid and ate it frequently. Fried up with some eggs in bacon grease.

She has a failing gaul bladder and I am trying to find the best way to prepare a rabbit I have in the fridge that doesn't involve fats.

How would you folks prepare a good fat free hare?

My mother used to make rabbit every Sunday when I was a child. Hard to find rabbit in my parts these days. She would dredge it in flour and brown it in a fry pan and then put it in the oven. When we got home from church it would be done and we had a nice Sunday meal. Our Sunday meal was usually served in the early afternoon. Us Germans did it this way in the olden days. I miss a good rabbit dinner or supper.
 
as rabbit has very little fat, I think the issue is dryness....

I'm thinking, use lard, fried HOT so it won't absorb any fat, and then braise, or slow cook in some stock???

Not sure you'd need to fry it at all really if doing a stew/braising.
 
I'd think a fast hot fry to get some cracklings and flavour added....

stew always seems bland to me if the meat isn't browned (or blackened as I like it)
 
Not a rabbit recipe but...Tell her not to hesitate having her Gallbladder removed. Two of my daughter's had theirs out within the last six months. Done outpatient, the registration and waiting their turn, took far longer than the procedure. They took a couple days off and went back to work. Tylenol was all that was needed for pain.
I have only played with rabbit a couple of times and all those dishes were country French with more butter and cream than Bunny...JJ

You missed read the original post he's trying to go fat free and lard diffidently not fat free. Things always take on some fat when fried in it.

Brine them overnight, Smoke for a couple of hours then wrap in foil with a splash of apple juice and back in the smoker (or oven) for a couple hours so it falls off the bone.

I've eaten lots of rabbit in my younger days. Always cooked on a spit over an open fire.
No reason you couldnt cook it on a rotisary or just on the grate of your smoker or grill, seasoned however you like. Any fat--and there won't be much--should render off.
Or just make a rabbit stew.

I think I would try cooking it using the Kettle/Vortex combo for an indirect high heat cook. Similar to frying w/o the oil.

Believe it or not there is a lot of meat on a rabbit and grandmother would make salad out of left overs. Just like she would chicken salad.

I used to raise rabbits. Probably had over 100 head at any one given time. Slaughtered thousands of them. By far my favorite was bbq'd on the grill just like chicken. Second was slow cooked in a crock pot with stock until it was fall-apart. Went with kraut real good with apples and onions, and thickened with ginger snaps like sauerbraten, but that's just the German coming out in me. Haven't had it in years now, but this thread just inspired me! Please... whatever you do... PLEASE post a thread on whatever you decide!

I had a few very painful attacks from my gall bladder. Was VERY happy to get rid of it! For the rabbit I’d consider doing it via sous vide with a reverse sear. Alternatively id consider my instant pot pressure cooker. Just ideas iff the top of my head. Might be good or might be awful?
