Made a meatloaf the other day and my second favorite thing (cold meatloaf sandwich is #1) to do with leftover meat loaf is to make Loco Moco.
If you don't know what Loco Moco is you ain't living right and you've never been to Hawaii! It goes like this. Rice, beef patty, fried egg (crazy people try and order scrambled eggs), brown gravy. That's the simple classic recipe. So here it is with meatloaf instead of the beef patty.

A bit of the meatloaf. Simple meat loaf 2 pounds grass fed local raised beef with onion, green pepper, some diced tomato, garlic, rice, egg, bread crumbs. Galzed with Ssam Sauce from Momofuku (Korean Chili sauce and it's good).
