Smoked Parmesan Garlic Chicken Meatloaf
1.5 pounds of Ground Chicken
1/2 cup Panko Bread Crumbs
1/2 cup Grated Parmesan Cheese
1/2 cup Shaved Parmesan Cheese
2 Tablespoons Minced Garlic
1/2 cup shredded Mozzarella Cheese
1 Egg
1/4 cup Milk
1 Tablespoon Montreal Steak Seasoning
1 Tablespoon chopped Fresh Parsley
1 Tablespoon chopped Fresh Basil
1/2 cup Buffalo Wild Wings Parmesan Garlic Sauce
1. Combine everything except BWW Sauce in large mixing Bowl.
2. Line loaf pan with wax paper.
3. Fill loaf pan with mixture and press into pan.
4. Put pan in freezer for at least 1 hour.
5. Fire up Smoker of choice.
6. Line baking sheet with tinfoil.
7. Turn out loaf pan onto baking sheet and remove wax paper.
8. Smoke at 225F until meatloaf is around 150F then brush on BWW sauce as a glaze and continue smoking until center is 165F.
9. Slice into desired thickness and top with more BBW Sauce if desired.
Served with Roasted Baby Potatoes and Roasted Brussels Sprouts that had also been brushed with the BWW Sauce. (also in the photo is a smoked beef/pork meatloaf with a Cherry Chipotle BBQ Sauce that I may do another post about)
