Korean Short Ribs…..Again

My with and boy spied a buy one get one free on short ribs so they scored a couple packs for din din tonight….

I was in the shop all day working on my heat test oven….

So the boy marinated them up:
Coke, sugar in the raw, soy, oyster, lemon grass, garlic, gochujang, sesame oil, Korean chili flakes, ginger, rice wine vinegar.

My turn…..out of the marinade and ready to go, this will be a quick cook:

Fresh on the Weber sear station….

3.5 min later and ready to turn….

And bingo the turn…..reveal the sear…

They were plated over some rice and bookended with some greens pan steamed with Korean chilis and my wife’s peanut dressed salad……

They boy just puts stuff in but here is the rough version. The exact ratio if very forgiving just adjust as you desire

Coke 1/2 - 1 can
sugar in the raw 2-3 Tbsp
soy sauce 1/4-1/2 cup
oyster sauce - Tbsp
lemon grass - 1/2 Tbsp of paste or 1/2 a lemon
garlic - 2-3 cloves
gochujang - 1-2 Tbsp
sesame oil - 1-2 Tbsp
Korean chili flakes - 1/2 - 1 Tbsp
ginger - 1/2 - 1 Tbsp paste or Tsp dry
rice wine vinegar - 2-3 Tbsp

If you don’t have everything don’t sweat it the coke sugar soy and garlic and red pepper are the key items. It’s tasty just with them

Thanks 90! It’s a super easy marinade that really can’t be messed up. Crap just the coke and soy sauce would be good…..

Thanks and you are welcome! We are or have been in that phase for some time. We were just in the big down and were in a huge Asian market store….man oh man soooooo much flavor stuff to consider!

Looks delicious! What’s the oven going to be used for?

The oven is for heat treating knifes. It has been designed to hit 2300 degrees if needed but will run it mostly at 1575 for carbon and then 1975 (ramping) for the AEB-L stainless I use……

10-4 I thought maybe that is what you were up to. Didn’t look like you were trying to bake frozen pizza! Lol

Jim, I hope you like it, Its pretty forgiving and universal as well. If you want a "lighter" tone then the coke and be swapped out for sprit or 7up....Just another variation, I ate a tone of chicken thighs as a kid over the fire like this!
