just saying hi.
looking to learn more about smoking meats. I've smoked fish for years but lately been wanting to do more. Parents got a 40" MES (gen 1) for me for christmas so now it's time to get it going.

I spend LOTS of time fishing for salmon, steelhead, ling cod, sea bass, and sturgeon. When I'm not fishing I'm hunting.

I live in Washington a little south of Olympia.

things I'm going to learn to smoke

whole chicken (today)
pork butt
turkey
wild game sausage, brats
fish
razor clams and oysters
oh and really want to smoke cheese

Welcome to the group Kris!  You'll find that this is a great place to share ideas on smoking, grilling, etc.  There are plenty of folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
