Hello fellow smokers. Greetings from South East Mass. I'm here to learn, ask questions, and contribute some of my own knowledge into the threads and conversations. I have been working in professional kitchens for over 25 years and recently picked up my first smoker a recteq duel fire 1200. I don't have a lot of experience in the smoking game, but I do have a passion for learning new things. So far, I am loving the experience of experimenting with different cuts of meat, rubs, sauces, and methods of smoking. I am looking forward to hearing from those of you that have been smoking way longer than I have; and hopefully contributing some of my own information and findings.

I am an avid beekeeper and I also enjoy being outdoors, hunting, fishing, hiking, and bird watching.

Welcome from a Minnesota snow bird happily in central Florida for the winter.

Explore the forum and find the different special interest subs. Don't have a apiary section. Would love to have a couple of hives, but alas live in city limits in MN and not allowed.

babydocsmoke babydocsmoke have you ever tried smoking some of your honey? I did it this past season and it came out awesome. I used some mesquite chips and did it on my stove top with a 6" hotel pan and a 4' perforated pan, and a tinfoil cover. I put some honey in a doubled up coffee filter (I did loose about a tablespoon of honey from seepage) and let it smoke for about 30 minutes. The end result had an intensely smoky smell with subtle overtones of thin blue smoke. I used it to make some dressings; but toss some chicken wings with it and you got a winner.

Interesting!! No I’ve never done that. I have made some killer hot honey by letting some smoked habaneros steep in my honey for a week or so and it is AMAZING on wings.

Might have to try your method!
