Names Mark. New to smoking but have a bit of OCD in me and I love to cook and bbq. Just bought an Oklahoma Joe with an offset fire box.

Mark, welcome to SMF!  Glad you're here, OCD and all.  Me too when it comes to food safety.  I lose track of how many times I wash my hands when handling meat for the smoker.
