Hi all, Im recently retired, living about 25miles south of London. I've got a fair bit of experience cold smoking, but plan to spend my declining years learning charcuterie. Outside of this I'm either fly fishing, shooting or dring proper Englsih beer whist watching cricket in the summer and rugby in the winter.
Hi Martin
Where in the UK? I am from near Ashford in Kent. Great to see you on the forum.
I am retired too however I would not class these as declining years - retiring was just a new beginning...
What have you been smoking so far? Charcuterie if great to do - though it can be a little challenging as well. A good thing to get started with would be something like Bresaola. It does not take long to cure and tastes delicious.
I run Woodchurch Smokery but these days am retired and am mostly smoking for pleasure than commercially.
If you need any Cure #1 or #2 please let ne know and I can get some over to you.

Cheers
Wade

Hello from Central Missouri, Central USA

If you hang out here long enough, you will make your own sausage to place on your charcuterie boards!

Be sure to take/post pictures...lots of picture!

Cool but not cold cask ( not keg) bitter ale. To be fair American beer has improved immeasurably since the first time I worked in the US. I could (and do) quite happily drink both west coast and New England DIPAS.

Welcome from Iowa! Love your saying as well! Remember seeing a big motorhome (diesel pusher) going down the interstate not long ago... on the back it said... spending my kids inheritance! I loved it!
