Today is my wife's birthday! She turned 59 and asked for a prime rib dinner. That's my girl!

Bought a 10# roast at the Harp's yesterday. My butcher, Brandon had been slicing some thin ribeye steaks and he offered me what was left. I split it into two pieces, one for tonight's dinner and one for later.

Did a dry brine and put it in a vacuum sealed bag overnight. Glad I did!

This afternoon I got the KJ ready for a 250° smoke with cherry chunks.

I got the roast on at about 2pm. At 4:30 it was ready for the high heat sear.

At 130° I wrapped it for a rest.

Another hour or so, the this happened...


Dinner time with Brussel sprouts, fresh baked sourdough bread and milk right from the cow! A birthday meal fit for my Queen!
