I got 5 pounds of deer jerky sliced up and soaking in the marinade. I used high mountain original seasoning. I also add hickory liquid smoke to my marinade. I use about a 1/4 cup of cold water per pound of meat for said marinade. I usually add cayenne pepper too but I didn't have it on hand. I let it sit in the marinade for 24-48 hours in the fridge and flip them around mid way through. Will probably go on dehydrator on Sunday

Guessing by adding the liquid smoke these will be oven jerky since your smoker is down for the count. Looking good.

Hi Mountain makes a great jerky seasoning. I like the original, too.
Hi Mountain sausage mix is killer, too.
You can still add some heat midway in the marinade.
