CS, Nice looking wings and the other goodies look delicious also!
Those wings look awfully good from my vantage point. Well done.
Point for sure
Chris
I hope you were listening to BOC while chomping down on those wings.
Wings look great!! Turkey and mesquite are a match made in Heaven. Ranks right up there with beer and pretzels, rum and coke, and peanut butter and jelly. Thanks for sharing.
Sorry I'm late to your party. I dunno what kind of party this is, but since it includes WINGS, I hope my fetish for them would let me get invited! It all looks great actually! Points all the way around!
Awesome
Take a look at Jeff's drunken chicken legs would be a nice twist to these turkey wings.

Thanks Warren, going to have to break Jeff’s book out for a study session when I get home from work!
Not sure its in his book I got the recipe from his weekly news post. If you can't find it let me know.

Well the boy and I went to the store to pick up some wings and sitting next to the “little” wings were these Godzilla turkey wing drum-ets and we both just looked at each other and smiled!!!!
We made a brine-aid with a 6% brine with both white & brown sugar, pepper, basil, oregano, onion, garlic and balsamic & red wine vinegar....and then they went in the fridge for an overnight marinade!

Got up this am and washed & dried them, then dusted them with POG & dusted basil and put them in the fridge to set the skin.

While the Godzilla wings where “chillen” I got the copper pot fired up.

These wingys are going to be treated to a succulent mesquite bath!

After about 3 hours at 250ish they are ready to be prepped for a lunch time snack.

Final prep was under the convection broiler to get the skin crispy enough to eat

Bam bam!

Brings tears to my eyes....oh wait maybe the tears was a result of 3 hours of mesquite smoke...NOT

These are a mans man snack but the flavor was crazy good!

The look on the dogs face when he realizes he is just a dog and he still doesn’t understand why he didn’t get one!

Great job, great write up, great pictures.......now waiting on smellivision.
Nice job on those wings!
If you add a little cure #1 you will also be amazed at the flavor you get from them. It's a whole new wing and is FANTASTIC with bbq sauce!
With the holidays coming up I can't wait until the grocery store starts stocking up on the Jennie-O thighs, drumbs, wings, and necks. I wait until they get marked to 1/2 price and then I buy a boat load, brine + cure them, and smoke them! Thighs done this way are my absolute favorite.
Keep it up and enjoy :)
