Wrapped up the wings in foil and wrapped the ribs with brown sugar and sauce then heated them up in the oven at 225. Then pan seared day old spuds garnished with SPOG & bacon!

Wings look great!! Turkey and mesquite are a match made in Heaven. Ranks right up there with beer and pretzels, rum and coke, and peanut butter and jelly. Thanks for sharing.

"dude" just love that! I'm sold on mesquite turkey from now on! I usually use cherry but no more.....

I checked my recipe emails from Jeff and didn't see it..........if I say pretty please will you educate me. :emoji_blush:
 
Well the boy and I went to the store to pick up some wings and sitting next to the “little” wings were these Godzilla turkey wing drum-ets and we both just looked at each other and smiled!!!!

We made a brine-aid with a 6% brine with both white & brown sugar, pepper, basil, oregano, onion, garlic and balsamic & red wine vinegar....and then they went in the fridge for an overnight marinade!

Got up this am and washed & dried them, then dusted them with POG & dusted basil and put them in the fridge to set the skin.

While the Godzilla wings where “chillen” I got the copper pot fired up.

After about 3 hours at 250ish they are ready to be prepped for a lunch time snack.

Thanks BigT! Smellivision would be a money maker! Talk about overload though......Just imagine spending a hour on the forum with it.......people around us would look at us sniffing our phones and say.......well you can imagine...

Oh then the after app filters to change the actual smell to the perfect aroma.....or the ones that make it smell like it shouldn’t......

If you add a little cure #1 you will also be amazed at the flavor you get from them. It's a whole new wing and is FANTASTIC with bbq sauce!

With the holidays coming up I can't wait until the grocery store starts stocking up on the Jennie-O thighs, drumbs, wings, and necks. I wait until they get marked to 1/2 price and then I buy a boat load, brine + cure them, and smoke them! Thighs done this way are my absolute favorite.

Thanks tallbm! We always buy a couple extra whole turkeys when they are supper cheap. I make our own turkey stock from one and usually brine and roast the rest. We also do lots of turkey drums! But now will add wings it.

I'm not a real "cure" person because it doesn't agree with me very well :-( but adding the balsamic and red wine vinegar really helps add an additional depth of flavor.
