Godzilla Wings - “A Picture Show”

Well the boy and I went to the store to pick up some wings and sitting next to the “little” wings were these Godzilla turkey wing drum-ets and we both just looked at each other and smiled!!!!

We made a brine-aid with a 6% brine with both white & brown sugar, pepper, basil, oregano, onion, garlic and balsamic & red wine vinegar....and then they went in the fridge for an overnight marinade!

Got up this am and washed & dried them, then dusted them with POG & dusted basil and put them in the fridge to set the skin.

While the Godzilla wings where “chillen” I got the copper pot fired up.

These wingys are going to be treated to a succulent mesquite bath!

After about 3 hours at 250ish they are ready to be prepped for a lunch time snack.

Final prep was under the convection broiler to get the skin crispy enough to eat

Bingo a lunch time snack for the boy and me!!!! One for each hand...lol

Yea they were huge! Felt a little caveman eating them....it’s what happens when the wife is gone the boy and me just eat meat!

Looks good. And the marinade sounds fantastic...
I have 3 dogs, a pair of Beagle Brothers and a 10 month old Pit / Boxer mix. I have not eaten the last three bites of a meal in a year. They don't beg but sit with their heads on my legs and give you those, " I've not eaten in a week..." Eyes...JJ

The marinade has a nice aromaticness to it......it is my go to for poultry!

We can’t have popcorn around ours cause he will go combat for it!!! It’s like crack to him.

The brine helps with the juicyness, next time will probably do a full 24 hours vs 12 hours but still tasty

Thanks chop! My wife is running a 10k on the Oregon coast with her sisters and had a Cesar with mesquite smoked chicken breast so I was inspired to use it on the turkey. I have to say mesquite is very nice with turkey!

I do love the copper pot! I used it all day today! After the wings were done I put some maple wood in and put on a couple racks of BBR....the copper pot dinner!

Honestly the star of the plate is the pan steamed carrots!!! They are candy!

This is off post but here is how I do the carrots....

Quartered carrots, tbs sugar, pinch of salt & white pepper, 1/3c white wine a dab of butter and light classic olive oil

Everything in the pan and on HIGH with a tight lid.

Here is a quick look inside at about 4 min in, at this point I tossed the in the pan a couple of times then the lid is back on.

At about 9-10 min the liquid is absorbed and some evap. I toss carrots and they are ready to serve

Beautiful and a big LIKE. The timing however is insanely ironic. We had a couple friends over yesterday and he mentioned wanting to do some wings on a nice propane smoker I sold to him a year ago or so. I love wings but can't do chicken as Tracy is allergic to it but she can do turkey. Then I thought about doing some monster spicy Buffalo turkey wings. Never seen them done before, I thought about it yesterday, and you did pretty much the same thing here. This is just too funny, but I love it!!

Thanks Robert! Turkey wings often get tossed....there is even a Bing Crosby Christmas song about the turkey wing being after the drum...inferring it’s “the bottom” of the turkey.....great song! But they can be tasty! So as Bing says it...”if you have a turkey wing God bless you”

So glad I could share! I know we will have them in our rotation. We also do legs but can’t wait to use mesquite on them next time!
