I had the pleasure of cooking 3 turkeys in the 500 gallon reverse flow I recently finished building.
I was sure glad to have my smoker inside on a cold rainy Thanksgiving day. I took ideas from several people here and combined what I liked with my own ideas and the final product was outstanding.
This was the first time I used injection on a bird and I am glad I tried it.
When prep began I separated the skin from the breasts and added butter under the skin and injected them then I added my poultry rub inside and stuffed them with lemon, orange, lime,apple and onion. I then added rub to the exterior of the birds and put them in the fridge to rest till the smoker was ready and fired up a chimney of charcoal and then started some apple wood burning. The smoker held 225° throughout the smoke. I am so impressed with how well this thing works I can hardly believe it and without the help of a lot if people here it never would have happened. About 6 hours later a little 12lb bird I did for my neighbors came out and a hour and a half later the two 15lb birds I did for my family were done. They were incredibly moist and tender and the light apple smoke added a great flavor! My neighbors said I have a new job as their official turkey cook.

I did not get any pictures of the turkey after I cut them my family was in too much of rush to eat them. This was the best turkey I have ever cooked!
