I found a full packer at Sam's Club for $3.65/lb and decided to go for it. It is a 13 lb. Brisket.
Trimmed it rubbed it and injected with some beef broth. Running my ME40 with AMPS and pecan smoke. I put it in at 220 degrees 11 hours ago.
Currently stalling. Hoping it pushes through soon.
Looks good. How'd it turn out ?
I was out of cell service all weekend and forgot to post the finished product!
Took it to 196 degrees then foul wrapped it with some of the drippings. Packed it in a cooler with towels on top for two hours.
Brisket was wonderful! Very tender and flavorful. The fam was happy and we ate a ton of it. I threw some in the slow cooker two days later with some BBQ sauce and it was still really tender. Good stuff!
