Enchiladas and charro beans keto style

Some tasty food for football night in America! A double cheese and beef enchilada served wet on my keto charro beans. Rich spicy black soy bean with plenty of bacon , chorizo , onions, peppers and spices. Double cheese and the enchilada is ground taco meat spiced with tx smoker tx smoker spice mix. and jalapeño queso in a 100% cheddar shell. Dressed up with some cilantro and Mexican crema. Definitely hit the spot. Did a few takeout trays for friends and family. My general recipe for the beans is here https://www.smokingmeatforums.com/threads/chile-lime-fajitas-and-charro-beans.309316/ I went heavy on the onions, peppers and bacon so bumped the broth up about 1.5 cups.

Damn those loom really good Jeff, very cool of you to provide takeout. I bet with the richness of those cheese shells, all they needed was one to fill them up.

Nice, I am so doing this, I have made the keto soy beans before and they are great. Is that cheese shell just shredded chedder baked on parchment paper then allowed to cool?

Bake at 400F until you see it browning around the edges. You have to work quick then for a rolled enchilada. Our filling in center, fold top and bottom up over then fold in from left and right. Flip over and voila done.

No enchilada sauce. When cut and spooned up with a bite of the beans it was flavor explosion. Today I did add a little pico on some for lunch. I also add a bit extra crema as well. You should give the beans a go. Just sub canned pintos for the black soy. They are one of my favorite things to eat now.

Looks great. You lost me on the beans though, I’m allergic to chicken. Have you ever made the beans with beef or vegetable broth and regular chorizo?
