Disco Jo's and smash burgers and leftover lingcod

    I wanted to fry some fish, but we had leftover lingcod from the other night. Just enough for the wife and I. I wanted JoJo's.

    For JoJo's I make a simple dredge of flour (1/2-1 cup) then whatever spice you want. You can really get crazy. I added onion powder, garlic, salt. Pepper, celery seed, paprika to this batch.

    I half, quarter and quarter again the taters into wedges. This batch I dusted with Old Bay seasoning prior to the dredge.

    Drop some peanut oil into the Disco and fire it up!

    I simply love batter spiced fries.

    They look great.

    Long ago there was a place in Tulsa that took whole peeled large baked potatoes and deep fried 'em..... Fancy place expensive food, but gotta love a deep fried, whole baked potato!

    I am assuming that the two cans of fermented grains were for the patter prep and not the chef? LOL

    No need to handle the handle when you're cookin!

    They do get hot. Welding gloves are a must for a Disco dancer!

    Case Nice job with the disc, no Ling Cod around here but we have Ling They don't get to big but taste great fried. Point

    I've had your ling before. Back when I did boat deliveries we'd stop at various places in Florida. Since we were by the marinas it usually ment eating seafood!
