Looks like I'm not the only one who went down this road today! The duck hunt was canceled because of conditions so I salvaged the afternoon by throwing a rack of baby backs on the smoker. I'm pleased with the results even though they went about 30 minutes too long.
My basic rub and four hours at 240-250. I wasn't sure if I had enough time for a lower temp but it appears I did. Hourly spritz with apple juice.
