Got into the cheese and Croghan Bologna last night.

The cheese was incredible! Have to stock up.

The Croghan Bologna was very disappointing.

Lacking in flavor.

If you still have any bologna left, don’t throw it out, my wife has an amazing recipe for a veggie bake that you could probably use it in…I’ll dig it out for you tonight when I get home from work…if you’re interested…

I'll try that someday. I ended up tossing it....
 
Every time I smoke some cheese I always swear that I will keep some off to the side for a few years. I never make it to more than a year as I am a cheese freak. Extra sharp smoked cheddar makes the BEST nachos ever, and I can't help myself.
