So I was talking with Chef Rob the other day and asked him for his recipe for Chorizo. He gave me a couple of pointers but what I did basically follows this recipe. I only did 5# so I cut in half

Here is my chorizo mixed and ready for the fry test


Here is a quick fry test to see if I needed to adjust spices


It was great just the way it was - so now what to do with it - lets have it at the gathering for breakfast

Start with potatoes and onions in the plow disc wok - sorry about the cell phone pic 


I then made a hole in the center and cooked the chorizo. Once cooked I added a dozen eggs  


As the eggs were finishing I scrambled it all together and threw on tortillas to heat. Everyone made their own burritos with this mix

I will try and add some burrito pics when I get them from LGHT from the gathering 


I highly recommend using this recipe - the chorizo was outstanding

That looks like an Awesome breakfast Gary!!!! And I thought Chorizo had to be stuffed, shows what I know! I'm going to have to try this!
 
I keep telling myself I'm gonna try that chorizo........I need to put up or shut up............. looks great...............

Add more egg and lose the potatoes (and make sure you have some tapatio sauce) and you have some killer breakfast tacos. take it form me, a self described Mexi-Cubo-Rican I grew up on Chorizo and eggs for b'fast
