That's an awesome looking breakfast. I have been wanting to make my own chorizo as well this year so I can cook the same breakfast on my wok for deer camp.

I was given some fresh made chorizo a few years back that had some finely diced jalapenos (seeds and all) mixed in. I highly recommend trying that! The fresh pepper taste is awesome!
