Wow, sorry I missed this when it came out a few days ago! That is a great-looking spread of food. Absolutely cannot go wrong with a smoked tri-tip, just a great crowd-pleasing cut. Love the stuff! Did you post your potato salad recipe somewhere? I really like the look of that.
Just noticed that you've switched your cheese smoking to using a mailbox mod. Did you notice a smoother smoke flavor when you put some distance between your AMNPS and the smoke chamber?

A BIG thanks for your recipe, Case! I'm planning to make potato salad and cole slaw to go along with homemade brats and pub bangers this weekend. I'm going to give your recipe a try!Thanks Clarissa! Haven't sampled the cheese yet, but I'm sure it will taste great. I'll follow up in a few weeks. The main thing with the mailbox mod for the mini is it keeps the smoker cooler.
Tater salad, here ya go. All credit to my mom it's her base tater salad recipe. I used russets this time but like Yukon golds, red or multicolor fingerlings too.
Okay tater salad.
Equal taters to egg ratio
For this batch I used 6 taters, six hard boiled eggs.
I like to leave the tater skin on. Cube taters into 1/2"-3/4" cubes. Boil in seasoned water (salt pepper garlic) until tender, but still a bit firm. Drain taters and dump into ice water to stop cooking, allow to cool.
Best method for eggs. Place eggs in pot with cold water. Bring to boil, continue to boil for 5 minutes. Remove from heat, cover and allow to stand for 25 minutes. After 25 minutes remove eggs into ice bath to stop cooking. Peel immediately.
If you want smoked eggs in your salad cold smoke the eggs for 2-3 hours using a sweet wood.
Finely chop the eggs. Reserve one egg to slice as garnish.
Mix chopped eggs, and taters
Quarter and slice 6 radishes. Quarter and slice 6-8 small kosher dills. Add to potato and egg mixture.
Salt, pepper, celery seed, chipotle powder, garlic powder. Too taste.
4-6 tablespoons Guldens spicy brown mustard.
1-2 tablespoons best foods mayo (Hellmans for you East coasters)
Add mustard first then small amounts of mayo until you get your desired creaminess.
Chopped chives were used from the garden this time. Green onions are good too.
Some variations can be used, wasabi mayo, fresh dill, chopped jalapenos etc.
Let set four several hours in fridge. Garnish with chopped chives, sliced egg and radish.
Great! let me know how it turns out. I like to add capers when I have them.
