I do mine a bit differently than most, I put them on smoke (155) and keep the top open a little bit for about an hour or hour and a half and then throw them into my dehydrator for an hour or two. I run cure 1 for food safety. They usually turn out really good when I actually get to eat a few. My kids usually devour them before I get more than a handful!
I like the fattier feel and texture to them with a bunch of smoke.
