Thanks! One of my favorite too! Same here....i never see them I always have to cut my own!Cap steaks are my most favorite beef on the critter !! But here where I live getting a cap steak without doing it yourself is almost as hard as finding a tri-tip.

Yep i agree! At least finished out on grain. And man your lucky! Split a steak and get the best part every time!The spinalis muscle of a grain fed beef is truly the most delicious bit of meat in existence. My ex always said 'that has too much fat for me' so I gladly ate her cap every single time we did ribeyes.

The Cap Steaks are not available around here. But I was drooling over some 10 oz Wagyu Cap Steaks from Snake River. Pretty spendy meat!...JJ
