Got the steak from a butcher I like. It's like 12$ somthing a pound. About 2 pound steak. Smoked with oak wood at 70-250 degrees and it took 1 hour 45 minutes to hit 132 degrees. Sure tasted good and really tender.

Quite rare.
I had a Mother-In-Law who use to order her steak, "Just run it through the kitchen and put it on a plate."
I had to go see what "Cap Steak" was.
 
That looks great. I don't see many cap steaks around here.

Thanks! Should be medium-rare. Took it to 132 degrees. Doing stuffed peppers today And corn so whatch for that thread
