After seeing @civilsmoker post on his costco plate ribs I remembered I had a package in the freezer. The kids are coming home from college too so have enough mouths to feed. Mine are from SRF. Wife hates them because of the amount of fat but I think they are delicious. She was supposed to be out craft fairing but came home early.
Great marbling

Wrapped at 175 in butcher paper. RFX probes dont work with tinfoil without poking through it.

Checked tenderness at 190. Were probe tender at 192. Took off and put into warmer for an hour to rest. Never pulled bones and sliced before but it worked well.

Wife hated it due to the fat and too much marbling. It tasted fantastic. Incredibly juicy and tender. Her loss. Kids loved it. May be last one I ever do but hope not. Fall finally arrived with cool temps in mid 59s and 20 mph winds. I will take it iver the 90s been having. Thanks to civil for the reminder.

Holy smokes that marbling is heaven! Very nice on the cook!

By the way Mrs C does like the heavy fat either….so I trim her pieces clean of the cartilage and fat, see the trimmed pieces below. The remainder is just very tender beef. And acidic sauce also tones the richness down as well.

PS I posted my butter 5-spice rub for ya! I hope you do these again as this ribs looked fantastic!

Looks delicious, I'm in the same boat, Mrs philpom doesn't like the high fat of short ribs, I love it. Those are heavily marbled, reminds be of some Wagyu i picked up at the farmers market a year or 2 ago.
