Going back to the Cow tenderloins . Definitly check those out . I've bought them before , and it's a good value . I was just looking for the best bang for my buck today .
You'll always save a buck or 2 doing the knife work yourself .

A tenderloin looks pretty rough coming out of the package, but I bet when all the trimming is done... I might have about 1/2 lb or so of trimmings. I make little medallions from the chain, and slightly pound them for breakfast steaks.

The ones I'm buying are peeled , and side muscle removed . So I just need to trim some silver skin .
I normally buy , or was before prices went up , 4 or 5 different items . Say a couple pork butts , beef knuckle , striploin and a rib roast .
I then mix all the trim and grind .
Sounds like you're making good use of it too .
 
Use a different strategy. More seafood! We're eating shrimp weekly.

If I eat anymore fish or chicken, you are going to need to scale me or pluck me. 😉
 
This is what I am going to do. Buy a whole prime tenderloin at Costco business, and cut steaks myself.
The last one I bought was at Chef Store last Christmas. Paid $120 and cut 7 - 3” fillets and then ground 3.5# of hamburger.

I’d say that if I bought it cut it would’ve cost near double.
 
I like to cook beef tips and noodles occasionally. I use beef tenderloin tips and found some at Creekstone Farms for a decent price. I added on two prime NY strips.

When I opened the 'prime' NY strips, they looked more like select grade. They were seared 3 minutes per side, to a medium rare. Long story short, they were tough, very tough. The wife and I fed them to our dogs, who had no complaints. What a major disappointment.

As they say, fool me once, shame on you. I will place no more orders with them. Other suggestions on tender steaks?
We use prime filet from Costco. Never a bad one yet.

We do the same thing with a prime tenderloin from costco. practically zero non-steak material. we cut them thinner than you, though. about 1 inch thick or so. neither of us can eat a 3/4 or 5/8 lb steak anymore. Often, we cook one and cut it in half for serving both of us.
