I've been accused of jumping into this griddle fracas feet first. Maybe I have, maybe not
I will say though that this thing has been a blast to cook on and it's SO versatile. Perhaps I just have too much time on my hands and continue to come up with weird things to make, but all have been excellent. Tracy has been involved in conducting a huge training session for the legal staff at the bank and has been working late, so it's tough to plan a dinner not knowing what time we will be eating. I've just been sort of shooting from the hip with a lot of dinners recently. I've shared a couple of these with friends and they encouraged me to post them due to the huge popularity that the griddles are experiencing right now.
Let's start with some thick sliced center cut pork loin chops. This Worcestershire sauce was recently highlighted by somebody here. It sounded amazing so I ordered some...and it didn't disappoint!!
Chops marinating in a good dose of the sauce, some CBP, and garlic powder
Cut up a nice salad
Onto the griddle we go
Beautiful sear on these things
Plated with the salad and some mac & cheese
Pork chop perfection!! At least for my tastes
Next up is a really nice taco salad. Get the 85/15 ground beef on the griddle
Brown it, add some of my taco seasoning, and a little water
Beef done. Bring it in the house to cool so it doesn't wilt the lettuce
Start with some Romaine
Add the beef
Tomatoes
Onions
Jalapenos
Cheese
Homemade smoked fire roasted salsa
Tri color tortilla strips
This was a salad that definitely ate like a meal!! It had the cool nature we like for a hot day in TX, nice textural elements from the veggies and tortilla strips, and just downright tasted good. It'll be a regular in our salad rotation.
Somebody has posted something akin to a cheese steak sandwich recently and I thought that sounded like a great idea. I ended up using beef tenderloin tips though since that's the first thing I came across in the freezer. Cut the tips into smaller pieces, add a little kosher salt, CBP, and minced garlic
Cut up some peppers and onions
Another salad, this time with just cucumbers and onions tossed with EVOO, spicy vinegar, and red pepper flakes
Found these little mozz balls at Costco. Each pack is about the size of a golf ball and has three small balls of cheese in it. They are really good!!
Crumble up the cheese
Fire up the flat top and put on the veggies and meat
Toss on a couple of ciabatta buns
Portion the meat mixture into three stacks and add the mozz then cover with a skillet to help melt the cheese
Looking good so far
Plated. It was hard to move the piles of goodies onto the buns without disrupting things but I did the best I could
Cheese melted beautifully.
This is three of them. Somehow I've managed to accumulate a large collection of griddle cooks in my folders. I may dig through them at some point and see if there are more y'all might like to look at. That of course will depend on feedback from this one. Not that I'm looking to have my name in lights but if nobody is interested any longer, there's no point in posting them. These were all very easy, quick to do, and very good. Not a one of them i won't make again, that's for sure.
