Going back to the Cow tenderloins . Definitly check those out . I've bought them before , and it's a good value . I was just looking for the best bang for my buck today .
You'll always save a buck or 2 doing the knife work yourself .

I like to save some as roasts . Can always cut them later if you want a steak

A tenderloin looks pretty rough coming out of the package, but I bet when all the trimming is done... I might have about 1/2 lb or so of trimmings. I make little medallions from the chain, and slightly pound them for breakfast steaks.

The ones I'm buying are peeled , and side muscle removed . So I just need to trim some silver skin .
I normally buy , or was before prices went up , 4 or 5 different items . Say a couple pork butts , beef knuckle , striploin and a rib roast .
I then mix all the trim and grind .
Sounds like you're making good use of it too .
