Brisket and Baby Back Chili

Chili cook-off day at our church tomorrow.  We had some leftover brisket from the last smoke and have some baby backs on the smoker today.  Sounds like smoked brisket and baby back rib chili!

Standard rib racks, nothing special:


Fresh batch of Jeff's rub to make them something special:


Pretty standard chili ingredients - brisket is a mix of burnt ends from the point and leftover flat.  The flat is chopped smaller than the point.  Brisket is going in from the start for a long slow simmer.


Almost forgot the veggies!  Green pepper, red pepper, onion, celery and of course jalapeno:


This one got too large for my biggest dutch oven!  It fit but was to the brim, two pots it is!


Baby backs just hit four hours on the smoke with pecan.  More to come!

That chili was at the church my wife attends I would have to stop bye.:biggrin:
