Biltong' Its Just Not Jerky

Baking soda acts as a tenderizer (dont add allot) The biltong mix my friend got me in the UK had the BS mixed with the salt, coriander and black pepper. This batch i did not have enough of the UK mix so i followed the recipe.

This aint rocket science.

Charlie made me this cool larding needle for the biltong.

Worked Great.





During the day here in S,FL the temps are pretty warm between 75-84* which is good.

At night the temps have been in the low to mid 60s so i had tp break out my temp equipment from my cure fridge days.

Glad i kept them



Temp controller set at 72* works great

 
Looks delicious, I am going to have to make some of this. Thanks for the info and pics.
