22 WSM without water pan or second rack. 275 with lump and post oak
3 hours unwrapped, I hour wrapped with
Honey, brown sugar, butter , hot sauce
1 hr unwrapped

Great color on those!! To make near perfect slices, wet your cutting board with warm water or thinned out sauce, and turn the ribs bone side up. Now you can see the rib bones better, and can pick the perfect line for slicing so you have equal amounts of meat on each side of the bone.
