Did 5 lbs 80/20 ground chuck beef sticks for the first time with cherry woodchips. After cool down to room temp I put them in oven on 350 for 10 minutes so casing would tighten up around meat to get that snap.Not to shabby.

Nice job on your first time - POINT,,, Looks like you got some good color on them,,, what flavor snack sticks did you make??

I used Big Casino recipe here.
Yep Cranky B they all gone now I made a mistake by taking them to work.lol
Think I will smoke a stuffed pork loin next since I have one in freezer

Now the folks at work will expect these on a regular basis, trust me!

My first time hearing of the flashing in the oven for 10 minutes... think it helps ?? Anybody else have an opinion on this ??

I usually bring stix to temp after enough smoke in the oven, but 350 would scare me to death worrying about fat rendering! Looks like they came out perfect, though. I keep saying I'm going to try Kabanosy but I always fall back on Big Casino's recipe....
