Okay, this is a continuation of a previous thread in which I made smoked picnic shoulder. Except, I turned it into what I call "BBQ Sweet Apple Smoked Shoulder Tacos."
The previous thread for the smoked picnic shoulder is here.
Now, for the Sweet Apple BBQ Sauce, you'll need:
3/4 cup apple juice (to your taste, adjusted for thickness)
1 cup brown sugar (to your taste, adjusted for thickness)
3 to 4 tablespoons apple cider vinegar (to your taste)
2 tablespoons molasses
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons chili powder
2 tablespoons green ancho chili powder
2 tablespoons smoked paprika
Salt & pepper to taste
Combine the apple juice, brown sugar, & ACV medium pot over medium heat and stir. Add the spices. Once everything is combined, reduce heat & simmer. Adjust for your taste. Can immediately (remember it is going to be hot).
For the tacos:
1. In a cast iron skillet, add a couple of tablespoons of high-smoke point cooking oil and heat the skillet over medium-high heat.
2. Add the previous day's smoked pork, cooking ~2 minutes
3. Add some of your previously made Sweet Apple BBQ sauce (be generous) & STIR CONSTANTLY until thick (don't cook too long or it'll dry out).
4. Serve over tortillas & your favorite toppings.
5. Enjoy!
